Lightly sweetened cantaloupe roasted to perfection.
Something amazing happens when cantaloupe is roasted in the oven – a naturally sweet fruit becomes even sweeter. While roasting, the cubes of cantaloupe collapse a little, after losing some of their water weight. What’s left is a sweeter, more complexly flavoured fruit with lightly singed edges. Each piece is so soft it almost melts in your mouth. Yum!
When Maple Roasted Cantaloupe is warm and fresh out the oven, it is amazing. On its own, it’s a healthy treat that you can definitely feel good about. But it’s also a great topping for other delicious foods like yogurt or ice cream. In the picture above, a bowl of fat-free vanilla yogurt becomes a healthy dessert when fresh mint and lightly caramelized cantaloupe pieces are added on top.
Transforming cantaloupe into a sweet dessert is a quick and easy three ingredient recipe. All you need to do is place cut up pieces of cantaloupe on a parchment paper lined baking sheet. Toss them with maple syrup and vanilla extract and bake. Adding maple syrup gives the melon an almost caramelized coating and the vanilla helps to amp up the flavours of maple syrup, making it sweeter and richer. After 20 minutes in the oven, you have a healthy, sweet treat.
Maple Roasted Cantaloupe
Whether your cantaloupe is hard, soft, or a little watery, roasting it makes every bite of your fruit sweeter and even more delicious. After a short time in the oven, you’ll have a softer, more complexly flavoured fruit with lightly singed edges.
- 1 cantaloupe, cut into cubes
- 2 tablespoons maple syrup
- 1/4 teaspoon vanilla extract
- Preheat oven to 400 degrees F (200 degrees C).
- Line baking sheet with parchment paper and place cantaloupe pieces in a single layer.
- Drizzle with maple syrup and vanilla. Mix to combine.
- Bake for 20 minutes.
