As someone who loves Mexican food, I absolutely adore guacamole. I could eat it on toast, I could eat it for breakfast. Honestly, I could pretty much eat it any time of the day or night. I could even scream it from the rooftops – I love guacamole!! I think you get the point.
I could probably talk your ear off about guacamole. Instead, I’ll give you the recipe.
You can make this guacamole as chunky or smooth as you like. And you can even increase the heat, from mellow and mild to sizzling and hot. Even the pickiest guacamole aficionados will enjoy this creamy avocado treat.
- 3 avocados, mashed
- 2 tomatoes, diced
- 2-3 cloves garlic, minced
- 1/4 onion, diced
- 1 lime, juiced
- 1/2 teaspoon cilantro, dried
- 1 teaspoon salt
- Mash together avocados, lime juice, and salt in a medium bowl.
- Add onion, tomatoes, garlic, and cilantro.
- For best flavour, refrigerate for one hour before serving.
Since this recipe makes a lot of guacamole, I usually freeze about half of it for later. I suggest that you use a double zip freezer bag. Spoon in as much guacamole as you want to freeze. Then roll the bag up before zipping it up – this will help it stay fresher longer. I’ve found that keeping the guacamole in a double zip freezer bag also works well in the fridge. Without the excess air, the guacamole stays that lovely green colour longer.
