I love guacamole. The combination of avocados, tomatoes, onions, lime and cilantro is so tasty, I could eat it every day. Seriously! This simple guacamole base is kicked up a notch with the addition of roasted red peppers. With a charred sweetness, roasted red peppers add a truly unique flavour.

It only takes 15 minutes to prepare and the red peppers add a really rich flavour, creating a creamy dip that’s the perfect combination of sweet and savoury with a pinch of tanginess. Guacamole is typically made with diced tomatoes. In Roasted Red Pepper Guacamole, red peppers replace the tomatoes. This simple change adds a really flavourful twist. The peppers amplify the tart lime flavour while adding a sweet, charred flavour to the whole dip. Without overpowering the rest of the ingredients, the red peppers perfectly meld into the guacamole.
Roasted Red Pepper Guacamole is so simple to make. Simply combine avocados, roasted red peppers, red onions, lime juice, cilantro, salt and red pepper flakes. You can customize this guacamole, making it as smooth or chunky as you like. I like my guacamole mostly smooth, with small chunks of avocado, onions, and red peppers throughout.

- 2 avocados, peeled, pitted and mashed
- 1/4 cup roasted red peppers, chopped
- 1/4 cup red onions, diced
- 1 tablespoon lime juice
- 3/4 tablespoon fresh cilantro, chopped
- 1/4 teaspoon salt
- 1/8 teaspoon red pepper flakes
- Mash together avocados, lime juice, salt and red pepper flakes in a bowl.
- Stir in onion, red peppers and cilantro.
