Smooth and creamy guacamole with chunks of fresh pineapple.
There’s a winter wonderland outside, but we’re feeling tropical today. That’s right. We’re in a festively tropical mood with delicious fresh pineapple and guacamole. Bring on the Mariachi band, we’re in the mood to party.
Before making the guacamole, I thought it would be funny to put the pineapple outside in the snow. For something so tropical to be sitting in something so wintery, my three-year-old daughter thought it was the funniest thing.
Pineapple Guacamole is a fun twist on the classic dish. As you may know, I love guacamole. I could eat it every day. Seriously. Whether it has a classic flavour, made with roasted red pepper, or strawberries, guacamole is always a crowd pleaser.
With a lightly sweetened flavour, pineapple perfectly replaces tomatoes in more traditional recipes. This simple change adds a really flavourful twist. The pineapple adds a pop of flavour that’s so unlike other guacamoles. It adds a sweet and lightly acidic taste that deliciously compliments the other ingredients. The pineapple balances the creamy avocados and compliments the tart lime and the savoury onion and cilantro.
With only six ingredients, Pineapple Guacamole may be one of the easiest guacamole recipes. Simply mash the avocados with the lime juice, cilantro and salt. Mix in the pineapple and onions and you’re done! Within ten minutes you have a recipe that’s ready for parties, get-togethers, or the perfect snack.
- 2 avocados, mashed
- 1/2 cup pineapple, diced
- 1/4 cup red onion, diced
- 1 tablespoon lime juice
- 1 teaspoon cilantro
- 1/4 teaspoon salt
- In a medium bowl, mash avocados with lime, cilantro and salt.
- Stir in pineapple and onions.
- Add to serving bowl. Garnish with pineapple.
Note: Pineapple Guacamole has more of a savoury flavour on the day it’s prepared. When it sits in the fridge overnight, the fruit flavour amplifies.
