He loved anything lemon. Whether it was a dessert or main course, if you wanted to make this humble man happy, lemon flavoured food was the way to his heart. Lemon Mug Cake makes me think of him. He’d love the light and fluffy cake batter with a perfectly sweet dose of lemon.
The double dose of lemon flavour comes from lemon juice and lemon zest. If you haven’t cooked with lemon zest before, it’s a great way to add a dose of flavour. Simply scrape some of the lemon’s yellow skin with a Microplane. The finely grated zest will melt into the mug cake creating a wonderfully lemony tasting dessert.

- 4 tablespoons all-purpose flour
- 3 tablespoons brown sugar
- 3 tablespoons milk
- 1 tablespoon unsweetened apple sauce
- 1 tablespoon lemon juice
- 1/2 teaspoon baking powder
- 1/4 teaspoon lemon zest
- pinch salt
- Combine flour, sugar, milk, apple sauce, lemon juice, baking powder, lemon zest, and salt in a microwave safe mug. Mix with a fork or small whisk.
- Microwave on high for 1 minute. If the cake is not ready, heat 10 seconds at a time until done.
- Let cool for a few minutes before eating.
