3cups vegetable broth
1 (14 ounce) can of pumpkin puree
1 (14 ounce) can of carrots, chopped and drained
1cup canned coconut milk
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon smoked paprika
1/4 teaspoon salt
Instructions
In a large pot over medium heat, add vegetable broth, carrots, onion powder, garlic powder, paprika, and salt. Bring to a simmer and cook for 5 minutes.
Stir in pumpkin puree. Cover the pot, reduce to simmer, and cook for 20 minutes.
Remove from heat. Add coconut milk. Stir to combine.
Using an immersion blender or potato masher, puree soup in the pot.
