Avocado Caesar Salad

Ingredients

Scale
  • 1 head romaine lettuce, chopped bite-sized
  • 1 ripe avocado, pitted and peeled
  • 2 tablespoons cottage cheese
  • 1 tablespoon red wine vinegar
  • 1/2 tablespoon lemon juice
  • 1 clove garlic, chopped
  • 1/4 teaspoon Worcestershire sauce
  • 1/8 teaspoon coarse salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Chop lettuce and set aside.
  2. In a food processor, combine avocados, cottage cheese, vinegar, lemon, garlic, Worcestershire sauce, salt, and pepper. Process until well combined.
  3. Transfer salad to a bowl. Toss with avocado sauce. Top with croutons.
  4. Plate and enjoy!
