- MEDITERRANEAN SALAD INGREDIENTS:
- 4 Roma tomatoes, chopped
- 1 English cucumber, chopped
- 1/4 red onion, chopped
- 2 avocados, diced
- 2 tablespoons fresh parsley
- LEMON DRESSING INGREDIENTS:
- 2 tablespoons lemon juice
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- In a small bowl, combine lemon juice, Dijon mustard, salt, garlic and pepper.
- In a large bowl, combine tomatoes, cucumber, onion and parsley. Mix well. Toss with lemon dressing. Add in avocados and gently toss.
- Plate and enjoy!
