Avocado Salmon Salad Roll Ups

Win raves from the lunch crowd! By replacing mayonnaise with avocados, you add vitamins, nutrients and a rich, amazing flavour to this salmon salad. Combining it with a hard boiled egg, onions, dill, and lemon creates a delicious salad that’s tasty any way you serve it.

Ingredients

Scale
  • 1 (8 ounce) can of salmon, drained
  • 1/2 avocado, peeled, pitted and mashed
  • 1 hardboiled egg
  • 2 tablespoons red onion, diced
  • 1 tablespoon lemon juice
  • 1/8 teaspoon dill weed
  • 2 (10-inch) tortillas

Instructions

  1. Mash together salmon, avocados, egg, lemon and dill in a bowl.
  2. Stir in onions.
  3. Eat it on its own, in a sandwich, or in a roll up.
  4. To make the roll up, evenly spread salmon salad on two tortillas. Roll up tortillas and slice into 1-inch thick pieces.
  5. Serve and enjoy!
