I love avocados, like seriously love avocados. Mashed, baked or tossed in a sandwich, avocados are amazingly tasty. Taste aside, avocados are super healthy. They’re packed with vitamins and nutrients – like vitamin K, vitamin B6, vitamin E, and vitamin C as well as copper, folate, pantothenic acid and dietary fibre. Avocados are filled with healthy fats and fibre, which helps to keep you healthy and even lose weight. Wow, talk about one healthy fruit.

Ingredients

Scale
  • 1 (6 ounce) can of tuna, drained
  • 1/2 avocado, peeled, pitted and mashed
  • 2 tablespoons red onion, diced
  • 2 tablespoons roasted red pepper, diced
  • 1 tablespoon lime juice
  • 1/4 teaspoon lime zest
  • 3/4 tablespoon fresh cilantro, chopped
  • 1/8 teaspoon salt

Instructions

  1. Mash together avocados, lime juice and salt in a bowl.
  2. Stir in tuna, onions, red peppers and cilantro.
  3. Eat it on its own or enjoy it in a sandwich.
  4. Enjoy!
