Banana and butterscotch are an explosively sweet combination. The naturally sweet banana becomes even sweeter when it bakes with the melted butterscotch chips. Seriously, banana and butterscotch are truly yummy together. My family loves this mug cake so much, they call it “Bananascotch.”

When you just want a small dessert, there is nothing like a mug cake. It starts off piping hot like it’s fresh out of the oven. And then it cools into a simply delicious sweet treat.

If you haven’t tried one before, mug cakes are a perfect dessert. They taste freshly baked and they are seriously easy to make. You can prepare, cook, and eat them in the same dish. Perfect, right?!!

Every little step uses only one small mug. That’s why it’s called a mug cake – one mug for one cake. So, there is almost no cleanup. Plus, with only a few ingredients, baking one of these cakes couldn’t get easier.

But don’t let the ease of making this make you think that you are sacrificing flavor. Banana Butterscotch Mug Cake bursts with banana and butterscotch flavor. And every bite tastes perfectly freshly baked.

What Makes this Banana Butterscotch Mug Cake healthier?

Mug cakes are just the perfect size. Instead of eating one piece of cake, here you can enjoy the whole thing. It really is the perfect size for one person. Go for it – eat the whole cake. Or, you can even share them. (My family always seems to find a fork or spoon to dig into my mug cake whenever I bake one!)

Banana Butterscotch Mug Cake is also a healthier cake. Unlike other banana and butterscotch cakes, this cake is made without butter, cream, oil, or eggs. Instead, it is given its rich texture from a combination of banana and milk. Healthier and tasty, this is one amazing cake. So, indulge in a treat that’s so perfectly decadent, you’d never know it was lower fat. I promise!!

How to Make Banana Butterscotch Mug Cake

Let’s go bananas! It’s time to make a yummy mini cake. Find your favorite mug. First, you’ll want to mash up the banana. This is the best way to make sure that you are measuring correctly. Since this is a smaller cake, you will only need about half a banana for this cake.

Add flour, brown sugar, milk, baking powder, vanilla, cinnamon, and salt. Stir it all together. Mix in the butterscotch chips to finish the sweet mini cake batter. Since it’s made without egg, you can lick the spoon or fork clean. I always do!

Now all that’s left is popping it in the microwave to cook. In less than 2 minutes it will be ready. Since all microwaves are different, I recommend that you start by cooking it on high for 1 minute. Continue to cook it for 10 seconds at a time until it is ready. You’ll know it’s finished when the top appears firm and a toothpick comes out clean.

Finally, it’s the best step. Time to eat and enjoy!!

For a quick and simple cake treat, Banana Butterscotch Mug Cake is the perfect snack. Filled with perfectly sweet flavors, this tender cake is ready in less than 5 minutes

  • Prep Time: 4 mins
  • Cook Time: 1 min
  • Total Time: 5 mins
  • Yield: 1 1x

Ingredients

Scale
  • 4 tablespoons all-purpose flour
  • 3 tablespoons brown sugar
  • 2 and 1/2 tablespoons banana, mashed with chunks
  • 2 tablespoons milk
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • pinch salt
  • 2 tablespoons butterscotch chips

Instructions

  1. Combine flour, sugar, apple sauce, milk, baking powder, cinnamon, and salt in a microwave safe mug. Mix with a fork or small whisk.
  2. Stir in butterscotch chips and mix to combine.
  3. Microwave on high for 1 minute. If the cake is not ready, heat 10 seconds at a time until done.
  4. Let cool for a few minutes before eating.
  5. Enjoy!

Notes

For the most accurate measurement, mash and then measure the banana.
