Some dinners just work. Bean and Cheese Enchiladas are one of them. I make these when I’m too tired to think and just need something everyone will eat. Beans, onions, cheese, tortillas, and sauce. That’s it. It goes in the oven for just 15 minutes. And it comes out warm, filling, and satisfying. You can make it for weeknights or casual get-togethers.

I’ve loved Mexican food for as long as I can remember. Growing up, whenever we visited Mexico, I’d soak up every dish. From the enchiladas to tacos and salsa to guacamole, I couldn’t get enough of it. Ok, maybe I ate a little too much guacamole (you’ll find a classic version, plus strawberry, pineapple, and even roasted red pepper).
There’s just something about Mexican food. It’s warm, comforting, and big on flavor. Now, I bring those same flavors into our home. And no matter the time of year, we make these dishes again and again.
These Bean and Cheese Enchiladas are one of my favorites. They’re made with just five simple ingredients. All you need is beans, onions, cheese, tortillas, and sauce. And they come together fast, like really fast.
Simply wrap flour (or corn) tortillas around the beans, onions, cheese. Top with enchilada sauce, more cheese, and green onions. Pop it in the oven. And in just 15 minutes, dinner is done!
They’re easy enough for a weeknight and still great when friends come over. You can serve them with rice, salad, roasted veggies, or whatever you already have. And of course you can enjoy them with chips and guacamole (can you tell how much I love this food?).
It’s an easy meal that always works. No stress, no big prep. Just an easy meal everyone’s happy to eat.

The Evolution of Delicious Enchiladas
Enchiladas have been around for a long time. In Mexico, they started as a simple, smart way to use up leftover tortillas. People would dip them in chili sauce, fill them with beans or meat, roll them up, and bake or fry them.

Then in the 16th century, the Spanish arrived. They brought new ingredients like cheese, pork, and beef. And they mixed them into the classic dishes. That’s where the enchiladas we know today really took shape.
This version leans into Tex-Mex and New Mexican styles. It uses flour tortillas (but you can totally swap in corn). And it keeps it classic, with only five ingredients. So, you can count on some shortcuts to make it perfect for weeknight dinners. Instead of whipping up your own sauce, we use a bottled version.
It has a mix of traditional flavors. This easy bean and cheese enchiladas dinner is comforting and exactly the type of weeknight dinner you need.

Can you make Bean and Cheese Enchiladas as a freezer meal?
Yes—you can. And it really helps on those busy nights. Freezer cooking is an amazing shortcut for weeknight dinners. You get an easy dinner right when you need it.
Here’s how you can do it: Follow the recipe and make the enchiladas. Don’t bake them yet. Instead, put them in a foil baking dish, cover with plastic wrap and foil, and freeze. You can freeze them for 2 to 3 months.
When you want to eat, thaw the dish in the fridge overnight. Take off the wrap and bake.
That’s it. No extra work on dinner day—just homemade enchiladas ready to go.

Ingredients for Flavorful Bean and Cheese Enchiladas
These enchiladas come together with just a few simple ingredients. Nothing fancy—just the kind of ingredients you may already have.
Here’s what you’ll need:
- Flour Tortillas: Soft and easy to work with. They hold everything in and soak up the sauce just right.
- Refried Beans: Creamy, rich, and filling. They bring all the flavor and give the dish a satisfying, hearty feel. They’re packed with protein and fiber, too.
- Cheddar or Mexican Cheese: Use what you have, sharp cheddar or a Mexican blend. It all works. The cheese melts into everything and makes each bite even better.
- Red Enchilada Sauce: The one shortcut that makes the whole thing pop. It adds bold flavor without extra effort.
- Green Onions: A little fresh kick. They add color and a mild onion flavor that works with everything else.
That’s it. Just five ingredients that come together fast and taste oh, so good.

Why You’re Using the Whole Green Onion
Green onions, also known as scallions, play a double duty in this recipe. They have two parts: the white bottom and the green top. Both parts are used in these Bean and Cheese Enchiladas.
The white parts are near the bottom of the onion, where the roots attach. They have a strong onion flavor that becomes milder and sweeter when cooked.
The green parts are the long, slender stalks above the bulb. They’re milder and fresher, often used raw or near the end of cooking. They add a light onion flavor that complements the dish.
For this dish, the white part flavors the bean mixture. And the green parts add a pop of color and freshness on top.

How to make Bean and Cheese Enchiladas
This is one of those dinners that comes together fast, but tastes like it took so much longer. The steps are simple, and once you make it, you’ll remember it forever. And it’s sure to become a family favorite.
Let’s get started!
STEP 1: PREHEAT OVEN TO 425°F (230°C)
Start by preheating your oven. That higher temp helps everything bake quickly and evenly, and it melts the cheese perfectly. The edges of the tortillas might even get a little crispy, which is the best.
STEP 2: PREPARE THE BAKING DISH AND SAUCE
Grab a 9×13 baking dish and pour ¾ cup of enchilada sauce into it. Use the back of a spoon to spread it around. Just enough to coat the bottom.
This stops the tortillas from sticking. And it makes the bottom of the enchiladas taste like actual enchiladas, not plain tortillas.
Then pour another ¼ cup onto a small plate. You’ll use it next for dipping the tortillas.

STEP 3: MIX THE BEANS
In a bowl, mix together the refried beans, enchilada sauce, and the white parts of the green onions.
Adding the sauce here gives the beans more flavor and makes them easier to spread. And the whites of the green onions have the strongest onion flavor. It will add flavor and soften as they bake.

STEP 4: ASSEMBLE THE ENCHILADAS
Take one tortilla and dip it into the sauce on the plate. This softens the tortilla a bit, so it’s easier to roll without cracking.
Spoon some of the bean mixture down the center, add a sprinkle of cheese, then roll it up and place it seam-side down in the baking dish.
Repeat with the rest. Line them up in the pan so they’re snug but not squished. When they’re touching like that, they bake better and hold together nicely.

STEP 5: Add the toppings
Once they’re all rolled up, pour the rest of the sauce on top. Try to get some sauce on each one. Then sprinkle the rest of the cheese and the green parts of the onions over the top.
That final layer of cheese gives you the gooey, bubbly topping that makes everyone excited to eat. And the green onions add a little brightness that balances all the richness.

STEP 6: BAKE
Put the dish in the oven and bake for 15 to 20 minutes. The cheese should be melted and bubbling, and the edges might look a little crisp. Before you know it, the easy bean and cheese enchiladas will be ready.
Once they’re out, let them sit for a few minutes before serving. It helps the filling set, so they don’t fall apart when you lift them out.
Top with sour cream, avocado slices, extra salsa, or just dig in as-is. These enchiladas are flexible, filling, and exactly what you want at the end of a long day.
Bean and Cheese Enchiladas are perfect for a weeknight dinners or easy entertaining. Enjoy the bold flavors and satisfying textures of this classic Mexican dish!

What can you serve with Bean and Cheese Enchiladas?
When it comes to sides, you’ve got options—delicious ones. A classic choice is Mexican rice. Its flavorful blend of spices, tomatoes, and onions makes a perfect match for enchiladas. The flavors go hand in hand and really bring out that Tex-Mex comfort.
If you want something lighter, a salad is a great choice. Toss together lettuce, tomatoes, cucumbers, avocado, and whatever fresh ingredients you have on hand. Top with your favorite dressing, like Light and Creamy Balsamic, Greek Salad Dressing, or French Salad Dressing.
Roasted vegetables are another tasty choice. Try bell peppers, broccoli, or cauliflower with a little oil, herbs, and spices. Roasted until tender and caramelized at the edges. They add color and sweetness to the enchiladas.
Of course, you can’t go wrong with some guacamole and chips. It’s always a hit! You can go with the classic guacamole, Strawberry Guacamole, Roasted Red Pepper Guacamole, or Pineapple Guacamole. And some crispy tortilla chips and you’re good to go.
There are so many ways to serve these enchiladas. Just pick what sounds good and dig in.
Easy Ways to Switch Up the Enchilada Flavors
Once you know the basics, enchiladas are easy to play around with. You can swap in different sauces, fillings, or tortillas to make them exactly how you like. No need to overthink it. Just use what you have and go from there. Here are some ways to switch it up:
- Use Corn Tortillas: For a more traditional flavor, swap flour tortillas for corn. They’re smaller, so you might need a few more. Just warm them first so they roll without cracking.
- Try Green Enchilada Sauce: It has a tangy flavor that’s great with chicken, veggies, or even beans. A simple swap that changes the whole dish.
- Add Proteins: Mix and match proteins like chicken, beef, pork, shrimp, or tofu to create unique flavor combinations. Each adds a new flavor to the dish.
- Mix Up the Beans: Don’t limit yourself to refried, black, or pinto beans. Try white beans, lentils, or chickpeas.
- Add Veggies: Load up on veggies. Roasted cauliflower, zucchini, and bell peppers make a satisfying filling. You’ll add color, texture, and make the dish more satisfying.
- Make it Vegan: Use dairy-free cheese or skip it altogether. Top with mashed avocado or vegan sour cream for added creaminess.
- Make it Gluten-Free: If you’re avoiding gluten, opt for gluten-free corn or flour tortillas. And use a gluten-free enchilada sauce.
Enchiladas are flexible, forgiving, and easy to make your own. So mix it up and make them just how you like.

What can you do with leftover bean and cheese enchiladas?
Bean and Cheese Enchiladas are packed with flavor. And if you happen to have a few left over, there’s no need to let them go to waste. Your leftovers can be just as tasty the next day. And you can even turn them into a whole new meal.
After they’ve cooled, place them in an airtight container and store them in the refrigerator. They’ll stay fresh for three to five days.
If you want to keep them for longer, freezing is a great option! Wrap each enchilada first in plastic wrap, then again in foil. This helps protect against freezer burn, so they keep tasting fresh. You can freeze them for up to three months. When you’re ready to use them, just let them thaw overnight in the fridge before reheating or using in a new dish.
Now, here are some delicious ways to use those leftover enchiladas:
- Enchilada Nachos: Spread tortilla chips on a baking sheet. Top with chopped leftover enchiladas, black beans, corn, diced tomatoes, and cheese. Bake until everything is hot and bubbly.
- Enchilada Soup: Cut the leftover enchiladas into small pieces. Add them to a pot of your favorite soup base, like chicken/vegetable broth or tomato soup. Add corn, beans, or any veggies you like. Let it simmer until everything’s warmed through.
- Enchilada Mac and Cheese: Chop the leftovers and stir them into a batch of macaroni and cheese. Pour it all into a baking dish, sprinkle with breadcrumbs, and bake until golden on top.
Don’t let those leftovers go to waste. Enjoy all the tasty possibilities!

Made as written but added cream cheese spread on tortillas and added mild hatch chilies to the beans. Very tasty but not so hot that kids wouldn’t like it.
Cyndi
I haven’t made this recipe, just coming here to say your recipe title is misleading. Black beans and refried beans two different things.
Amy H
I made this last night. I added roasted onion, bell pepper and jalapeño in the bean mixture.. I mixed red and green enchilada sauce as I didn’t have enough red. Also added green chilis on top. Didn’t have black olives or I would have added that to the top as well. Mine came out soggy and doughy from the flour tortillas. Not sure where I went wrong. Maybe next time, if I revisit, I’ll use corn🤷🏼♀️

Wow! This is so good. Everyone loves it. And I made it just like the recipe.
