Ingredients

  • 1 pound potatoes, peeled and diced (3 to 4 Yukon gold potatoes)
  • 1 pound lean ground beef or plant based veggie ground
  • 1 small yellow onion diced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons grapeseed oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a large skillet over medium heat, add oil, potatoes, and ½ teaspoon salt. Cook, stirring often, until the potatoes are turning golden and becoming tender but are still too firm to eat, 6 to 10 minutes.
  2. Add diced onions and continue cooking for 5 minutes, until the onions are lightly browned.
  3. Add ground beef (or veggie ground), Worcestershire sauce, Dijon mustard, ½ teaspoon salt, and pepper. Break up the beef and cook until the potatoes and onions are tender and the meat is fully cooked, 6 to 8 minutes.
  4. Serve hot, and add optional toppings.

Notes

Optional Additional Toppings: sour cream, green onions, or shredded cheddar cheese.
