With a light, velvety consistency and a subtle chocolate flavour, Chocolate Cakie Sandwiches are a simple, sweet treat. Whether you decide to eat them as a sandwich, cupcake style with the icing on top, or on their own, cakies are always full of fluffy, chocolatey goodness.
Using both baking soda and baking powder gives the cakies their light, spongy consistency. Without them, cakies would be harder, crunchier, and more like a traditional cookie.
To make this dessert more fun, me and my two year old daughter tinted the colour of the cream cheese frosting. She chose three colours – yellow, green, and blue. Together we dropped in the food colour. She loved watching the cream cheese icing change from white to the vibrant colours you see below.

Chocolate Cakie Sandwiches are a fun party food. It’s easy for everyone to customize their own cakie. Choose your favourite coloured frosting and top it off with sprinkles. Whether you choose yellow, blue, green, or another coloured filling, Chocolate Cakie Sandwiches are a creamy, chocolatey treat.
To give the cakies a uniform size, I used a sandwich cookie pan (shown here). If you don’t have one, simply measure the cakie batter. Mine are 1 and 1/2 teaspoons each. They’re a little bigger than a silver dollar, perfect for a couple bites of cakie deliciousness.

Cakies have a soft, spongy consistency with a subtle chocolate flavour. When you enjoy them with cream cheese icing, Chocolate Cakie Sandwiches are even sweeter.
Ingredients:
- 1 cup and 2 tablespoons all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsweetened apple sauce
- 3 tablespoons egg whites
- 1/2 teaspoon vanilla extract
Frosting:
- 1 1/2 cups low fat cream cheese, room temperature
- 1/2 cup granulated sugar
- 3 tablespoons plain fat free Greek yogurt
- 1/2 teaspoon vanilla extract
- Food colouring (optional)
Directions:
- Preheat oven to 325 degrees F (165 degrees C).
- In a medium-sized bowl combine flour, brown sugar, granulated sugar, cocoa powder, baking powder, baking soda, and salt.
- In a smaller bowl combine apple sauce, egg, and vanilla.
- Add apple sauce mixture to flour one. Stir to combine.
- Spoon (1 and 1/2 teaspoon sized) cakie batter onto cookie sandwich pan or baking sheet.
- Bake for 9 to 10 minutes.
- To prepare frosting, combine cream cheese, sugar, yogurt, and vanilla in a mixing bowl. Mix until smooth. Add food colouring, a few drops at a time.
- Let cakies cool before frosting.
- Enjoy!
