How to Make Chocolate Chip Pumpkin Bars

If you’ve made brownies or blondies before, you’ll find Chocolate Chip Pumpkin Bars are super easy to make. But if you’re new to the world of brownies or blondies, after making this simple recipe, you’ll be hooked!

To start, you’ll want to add all purpose flour, baking powder, and salt. Next, stir in sugar, cinnamon, and pumpkin pie spice. These ingredients increase the flavour of the pumpkin, making it sweeter and more savoury.

In a smaller bowl, you’ll combine pumpkin puree, apple sauce, yogurt, eggs and vanilla. These ingredients give a pumpkin flavour and add the perfect amount of moisture to the bars, making them fudgy and tasty. When it is mixed together, pour the pumpkin mixture to the flour one and stir to combine.

Now comes the chocolate. Yes, that ooey-gooey melt-in-your-mouth chocolate that takes tasty bars from being good to being amazing. Once the chocolate is mixed in, add the batter to a nonstick baking pan.

Chocolate Chip Pumpkin Bars are truly yummy! With a soft and chewy pumpkin-flavoured centre and melt-in-your-mouth chocolate chips, these bars are a truly tasty treat.

Ingredients

Units Scale
  • 2 cups flour
  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup pumpkin puree
  • 1/2 cup unsweetened apple sauce
  • 1/4 cup plain fat free Greek yogurt
  • 4 tablespoons egg whites
  • 2 teaspoons vanilla extract
  • 3/4 cup semi-sweet chocolate chips, plus 1/4 cup for topping

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Coat non-stick baking pan (13 x 9) with cooking spray.
  3. In a large bowl, combine flour, sugar, cinnamon, pumpkin pie spice, baking powder, and salt.
  4. In a smaller bowl combine, pumpkin puree, apple sauce, yogurt, eggs and vanilla.
  5. Add the pumpkin mixture to the flour one. Mix to combine. Stir in chocolate chips.
  6. Add pumpkin bars mixture to baking pan. Sprinkle with remaining chocolate chips.
  7. Bake for 35 to 40 minutes.
  8. Cool 5 to 10 minutes before cutting into 12 bars.
  9. Enjoy!
