2cups corn kernels
1cup all-purpose flour
1/4cup Italian bread crumbs
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/4cup onion, diced
1 tablespoon oil
3 tablespoon egg whites
CREAMY LIME SAUCE INGREDIENTS:
1/2cup plain fat free Greek yogurt
1 tablespoon onion, minced
1/2 tablespoon lime juice
1 teaspoon ginger, minced
1 teaspoon cilantro, dried
1 teaspoon honey
Preheat oven to 400 degrees F (205 degrees C).
In a medium skillet over medium heat, sauté onion in oil for 5 minutes, or until tender. Set aside.
In a large bowl, combine flour, bread crumbs, baking powder, salt, and pepper.
In a small bowl, combine milk and eggs. Add to flour mixture. Gently fold in corn and onions.
Coat muffin tin with cooking spray. Fill each tin.
Bake muffins for 20 minutes, or until muffin tops are lightly browned.

Let muffins cool for 5 minutes before removing from tin.
