Ingredients

  • 1/2 pound lean ground beef change
  • 1 (16 ounce) can of refried beans
  • 1 (15 ounce) can of black beans, rinsed and drained
  • 1 cup salsa
  • 8 soft taco shells (or similar tortillas/wraps)

Instructions

  1. In a large pan over medium heat, cook beef for 4 to 6 minutes, until no longer pink. Gentle tilt pan to the side. Using a spoon, carefully remove excess fat and discard into a bowl.
  2. Stir in salsa and bring to a boil. Reduce heat to simmer.
  3. Simmer uncovered for 6 to 8 minutes, or until the liquid evaporates.
  4. Stir in black beans to make beef mixture. Cook for 2 minutes, until heated through. To safely eat ground beef, cook until an internal temperature of 160°F (71°C).
  5. To serve, spread refried beans over taco shells. Top with beef mixture. Optionally, you can add any other toppings.
