Healthy Spinach Chocolate Chip Bites is adapted from my Spinach Chocolate Chip Muffins recipe. The most obvious difference between the two recipes is the size of the muffins. The original recipes make a full-sized muffin, while the new one makes a smaller bite-sized treat. Size aside, these mini muffins pack a sweeter, richer flavour, that’s thanks to one special ingredient – vanilla Greek yogurt.
Greek Yogurt is amazing! You can enjoy it on its own, eat it with fruit or granola, and when it’s added to a mini muffin recipe, it gives the whole batch a sweeter flavour and moister texture. It also adds a subtle pop of vanilla, which makes them even tastier. Smaller, sweeter and even more delicious – with Healthy Spinach Chocolate Chip Bites, there is even more to love!
Forget artificial colours, Healthy Spinach Chocolate Chip Bites are given their vibrant green colour from finely chopped spinach. The spinach is mixed right into the batter, giving them a beautiful colour without any salad flavour.

Ingredients
- 1 cup all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 2/3 cup packed spinach
- 1/3 cup apple sauce
- 1 1/2 tablespoons vanilla fat free Greek yogurt
- 1/4 cup honey
- 2 tablespoons egg whites
- 1/2 tablespoon vanilla
- 3/4 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 350 F (175 C).
- Using a food processor, chop spinach until pieces are small and fine.
- In a large bowl combine flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl combine spinach, apple sauce, yogurt, honey, egg whites, and vanilla.
- Pour flour mixture into the spinach one. Stir to combine. Fold in chocolate chips.
- Coat mini muffin tin with cooking spray. Spoon muffin batter into each tin.
- Bake muffins for 12 to 15 minutes, or until muffin tops are lightly browned.
- Let muffins cool for 5 minutes before removing from tin.
- Enjoy!
