Ingredients

  • 1 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup packed spinach
  • 1/3 cup apple sauce
  • 1 1/2 tablespoons vanilla fat free Greek yogurt
  • 1/4 cup honey
  • 2 tablespoons egg whites
  • 1/2 tablespoon vanilla
  • 3/4 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Using a food processor, chop spinach until pieces are small and fine.
  3. In a large bowl combine flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl combine spinach, apple sauce, yogurt, honey, egg whites, and vanilla.
  5. Pour flour mixture into the spinach one. Stir to combine. Fold in chocolate chips.
  6. Coat mini muffin tin with cooking spray. Spoon muffin batter into each tin.
  7. Bake muffins for 12 to 15 minutes, or until muffin tops are lightly browned.
  8. Let muffins cool for 5 minutes before removing from tin.
  9. Enjoy!
