Lemon Baked Cod

Lemon Baked Cod is the perfect quick, easy, and healthy dinner. Dinner will be on the table in less than 30 minutes. Serve this fish with some brown or white rice and you have a delicious, simple meal.

  • Total Time: 20 mins

Ingredients

Scale
  • 4 (8 ounce) cod fillets
  • 1 and 1/2 tablespoons lemon juice
  • 1 tablespoon vegetable broth
  • 1/2 teaspoon thyme, dried
  • 1/2 teaspoon oregano, dried
  • 1/2 teaspoon parsley, dried
  • 1/2 teaspoon paprika
  • 2 clove garlic, minced
  • salt and pepper, to taste

Instructions

  1. Preheat oven to 400 degrees F (230 degrees C).
  2. Rinse fish and pat dry with paper towel.
  3. Place cod in a shallow dish. Drizzle with lemon juice and vegetable broth. Sprinkle with remaining ingredients.
  4. Bake for 15 to 20 minutes or until it flakes easily with a fork.
  5. Enjoy!
