The smell of lemon desserts always makes me think of my late grandfather. He loved anything lemon. Whether it was a dessert or main course, if you wanted to make this humble man happy, lemon flavored food was the way to his heart. He’d love Lemon Mug Cake with the light and fluffy cake batter and a perfectly sweet dose of lemon.

If you love lemon, this is seriously the dessert for you. With a double dose of lemon flavor, this cake is truly lemon-licious.

The lemon flavor comes from lemon juice and lemon zest. If you haven’t cooked with lemon zest before, it’s a great way to add a dose of flavor. Simply scrape some of the lemon’s yellow skin with a Microplane. The finely grated zest will melt into the mug cake creating a wonderfully lemony tasting dessert.

Mug cakes are a quick and easy dessert. If you haven’t tried one before, this is one to try. Lemon Mug Cake is sweet, tasty, and seriously easy to make. You can prepare, cook, and eat them in the same dish. Perfect, right?!!

Lemon Mug Cake is also a healthier cake. Unlike other lemon cakes, this cake is made without butter, cream, or oil. Instead, it is given its rich, creamy texture from a combination of milk and apple sauce. Healthier and tasty, this is one sweet cake. It’s so tasty, you won’t miss the butter, cream, or oil.

How to Make Lemon Mug Cake

It’s time to make a tasty, lemon dessert! Find your favorite mug, it’s about to be filled with a yummy mini cake. Add flour, sugar, milk, apple sauce, lemon juice, baking powder, lemon zest, and salt. Stir it all together. Since it’s made without egg, you can lick the spoon or fork clean. It’s always tasty!

Now all that’s left is popping it in the microwave to cook. Since all microwaves are different, I recommend starting at 1 minute on high. Continue to cook for 10 seconds at a time until it is ready. You’ll know it’s finished when the top appears firm and a toothpick comes out clean.

Finally, it’s the best step. Go for it –  indulge in a lemon treat.

For a quick and simple cake treat, Lemon Mug Cake is the perfect snack. Filled with perfectly sweet lemony flavours, this spongy cake can be enjoyed with a strawberry or on its own.

Ingredients

Scale
  • 4 tablespoons all-purpose flour
  • 3 tablespoons brown sugar
  • 3 tablespoons milk
  • 1 tablespoon unsweetened apple sauce
  • 1 tablespoon lemon juice
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon lemon zest
  • pinch salt

Instructions

  1. Combine flour, sugar, milk, apple sauce, lemon juice, baking powder, lemon zest, and salt in a microwave safe mug. Mix with a fork or small whisk.
  2. Microwave on high for 1 minute. If the cake is not ready, heat 10 seconds at a time until done.
  3. Let cool for a few minutes before eating.
  4. Enjoy!

    Love lemon desserts, and these mug cakes and pies everywhere are tempting… But not tempting enough to get me to forfeit what little counter space I have for a microwave! Maybe if we do a remodel, we can swing a built in, but for now, I’ll have to experiment at someone else’s house!
