Now all that’s left is popping it in the microwave to cook. Since all microwaves are different, I recommend starting at 1 minute on high. Continue to cook for 10 seconds at a time until it is ready. You’ll know it’s finished when the top appears firm and a toothpick comes out clean.

- 4 tablespoons all-purpose flour
- 3 tablespoons brown sugar
- 3 tablespoons milk
- 1 tablespoon unsweetened apple sauce
- 1 tablespoon lemon juice
- 1/2 teaspoon baking powder
- 1/4 teaspoon lemon zest
- pinch salt
Instructions
- Combine flour, sugar, milk, apple sauce, lemon juice, baking powder, lemon zest, and salt in a microwave safe mug. Mix with a fork or small whisk.
- Microwave on high for 1 minute. If the cake is not ready, heat 10 seconds at a time until done.
- Let cool for a few minutes before eating.
