Maple Mini Muffin Pancakes are as fluffy as your favourite pancake. Take a big bite out of these guilt-free treats and enjoy them any time of the day.
- Prep Time: 7 mins
- Cook Time: 8 mins
- Total Time: 15 mins
- Yield: 24 mini muffins 1x
Ingredients
- 1 cups all-purpose flour
- 1/2 tablespoon baking powder
- 1/2 teaspoon salt
- 1/8 teaspoon cinnamon
- 1/2 cup fat free plain Greek yogurt
- 1/2 cup milk
- 2 tablespoons egg whites
- 2 tablespoons maple syrup
- 2 tablespoons unsweetened apple sauce
- 1/2 teaspoon vanilla
Instructions
- Preheat oven to 425 degrees Fahrenheit (220 Celsius). Coat mini muffin pan with non-stick cooking spray.
- In a large mixing bowl, combine flour, baking powder, salt, and cinnamon.
- In a small mixing bowl, combine yogurt, milk, eggs, apple sauce, maple, and vanilla.
- Add yogurt mixture to flour one. Stir to combine. Fill mini muffin tins.
- Bake 8 to 9 minutes, or until muffins are golden brown on top.
- Let cool for 1 to 2 minutes before removing from pan.
- Plate and enjoy!
