Ingredients

  • 1 cups all-purpose flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/2 cup fat free plain Greek yogurt
  • 1/2 cup milk
  • 2 tablespoons egg whites
  • 2 tablespoons maple syrup
  • 2 tablespoons unsweetened apple sauce
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 425 degrees Fahrenheit (220 Celsius). Coat mini muffin pan with non-stick cooking spray.
  2. In a large mixing bowl, combine flour, baking powder, salt, and cinnamon.
  3. In a small mixing bowl, combine yogurt, milk, eggs, apple sauce, maple, and vanilla.
  4. Add yogurt mixture to flour one. Stir to combine. Fill mini muffin tins.
  5. Bake 8 to 9 minutes, or until muffins are golden brown on top.
  6. Let cool for 1 to 2 minutes before removing from pan.
  7. Plate and enjoy!
