Mexican Rice and Black Beans Bowl
A one-pot vegetarian-friendly meal that’s sure to impress. Mexican Rice and Black Beans Bowl is easy to throw together. Made with onions, garlic, and beans, this tasty meal is satisfying and delicious.
- Prep Time: 5 mins
- Cook Time: 25 mins
- Total Time: 30 mins
- Yield: 4 to 5 1x
- 1 tablespoon oil
- 1 and 1/2 cups onion, diced (1/2 onion)
- 2 cloves garlic
- 2 cups brown rice, cooked
- 4 cups vegetable stock
- 2 tablespoons tomato paste
- 1 (19 ounce) can black beans
- 1/2 teaspoon chilli powder
- 1/2 teaspoon salt
- 1/8 teaspoon oregano
- 2 tablespoons fresh cilantro
- In a heavy skillet, heat oil over medium heat. Add onion and garlic and cook for 5 minutes.
- Carefully add rice and stir-fry for 2 minutes.
- Stir in vegetable broth, tomato paste, beans, chilli powder, salt and oregano.
- Bring to boil. Cover and simmer for 15 to 20 minutes. If there is still liquid, uncover and simmer for another 5 to 10 minutes. Fluff with a fork when done.
- Remove from heat and garnish with cilantro.
- Serve and enjoy!
