Ingredients
- 1 tablespoon oil
- 1 and 1/2 cups onion, diced (1/2 onion)
- 2 cloves garlic
- 2 cups brown rice, cooked
- 4 cups vegetable stock
- 2 tablespoons tomato paste
- 1 (19 ounce) can black beans
- 1/2 teaspoon chilli powder
- 1/2 teaspoon salt
- 1/8 teaspoon oregano
- 2 tablespoons fresh cilantro
Instructions
- In a heavy skillet, heat oil over medium heat. Add onion and garlic and cook for 5 minutes.
- Carefully add rice and stir-fry for 2 minutes.
- Stir in vegetable broth, tomato paste, beans, chilli powder, salt and oregano.
- Bring to boil. Cover and simmer for 15 to 20 minutes. If there is still liquid, uncover and simmer for another 5 to 10 minutes. Fluff with a fork when done.
- Remove from heat and garnish with cilantro.
- Serve and enjoy!

Vegetable stock or broth? The ingredients list says stock, but the instructions says broth. I doubled the recipe, but had a lot of excess liquid. It was still fine once I threw the liquid off, so next time I’d just double everything except the liquid.
