Mexican Rice and Black Beans Bowl

Ingredients

  • 1 tablespoon oil
  • 1 and 1/2 cups onion, diced (1/2 onion)
  • 2 cloves garlic
  • 2 cups brown rice, cooked
  • 4 cups vegetable stock
  • 2 tablespoons tomato paste
  • 1 (19 ounce) can black beans
  • 1/2 teaspoon chilli powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon oregano
  • 2 tablespoons fresh cilantro

Instructions

  1. In a heavy skillet, heat oil over medium heat. Add onion and garlic and cook for 5 minutes.
  2. Carefully add rice and stir-fry for 2 minutes.
  3. Stir in vegetable broth, tomato paste, beans, chilli powder, salt and oregano.
  4. Bring to boil. Cover and simmer for 15 to 20 minutes. If there is still liquid, uncover and simmer for another 5 to 10 minutes. Fluff with a fork when done.
  5. Remove from heat and garnish with cilantro.
  6. Serve and enjoy!
