Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 cup fat free plain Greek yogurt
  • 1/2 cup pumpkin puree
  • 2 tablespoons egg whites
  • 2 tablespoons maple syrup
  • 2 tablespoons unsweetened apple sauce
  • 1/2 teaspoon vanilla
  • 1/2 cup semi-sweet chocolate chips (3 chips per muffin)

Instructions

  1. Preheat oven to 425 degrees Fahrenheit (220 Celsius). Coat mini muffin pan with non-stick cooking spray.
  2. In a large mixing bowl, combine flour, sugar, baking powder, salt, cinnamon, ginger, nutmeg.
  3. In a smaller mixing bowl combine yogurt, pumpkin, eggs, maple, apple sauce, and vanilla.
  4. Add yogurt mixture to flour one. Stir to combine. Fill mini muffin tins. Top with chocolate chips.
  5. Bake 8 to 9 minutes, or until muffins are golden brown on top.
  6. Let cool for 1 to 2 minutes before removing from pan. Plate and enjoy!
