Ingredients

  • 1 cups all-purpose flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1/2 cup fat free plain Greek yogurt
  • 1/2 cup milk
  • 2 tablespoons egg whites
  • 2 tablespoons maple syrup
  • 2 tablespoons unsweetened apple sauce
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 425 degrees Fahrenheit (220 Celsius). Coat mini muffin pan with non-stick cooking spray.
  2. In a small mixing bowl, combine flour, baking powder, salt, and cinnamon.
  3. In another mixing bowl combine yogurt, milk, eggs, apple sauce, maple, and vanilla.
  4. Add yogurt mixture to flour one. Stir to combine. Fill mini muffin tins.
  5. Bake 8 to 9 minutes, or until muffins are golden brown on top.
  6. Let cool for 1 to 2 minutes before removing from pan.
  7. Plate and enjoy!
