Next, add flour, sugar, milk, baking powder, mint extract, and vanilla extra. Stir it together before mixing in the chocolate chips. Since it’s made without egg, you can lick the spoon or fork clean. I always do. It’s just so yummy!
Now it’s time to bake. In less than 2 minutes it will be ready. Since all microwaves are different, I recommend that you start by cooking it on high for 1 minute. Continue to cook it for 10 seconds at a time until it is ready. You’ll know it’s finished when the top appears firm on top and a toothpick comes out clean.

Ingredients
- 4 tablespoons all-purpose flour
- 3 tablespoons granulated sugar
- 2 1/2 tablespoons avocado, mashed
- 2 1/2 tablespoons milk
- 2 tablespoons semi-sweet chocolate chips
- 1/2 teaspoon baking powder
- 1/4 teaspoon mint extract
- 1/4 teaspoon vanilla extract
Instructions
- Using a microwave safe, 8-ounce mug, add flour, sugar, avocado, milk, baking powder, mint and vanilla. Mix with a fork or a small whisk.
- Add chocolate chips and mix to combine.
- Microwave on high for 1 minute. Continue to cook for 10-second intervals until the cake is firm on top and a toothpick comes out clean.
- Let cool for a few minutes before eating.

Mash the avocado until there are virtually no chunks. Then measure the 2 and 1/2 tablespoons. This is the most accurate way to measure a puréed fruit.
