You may know that I love salads. Crisp veggies with a fresh and delicious dressing is such a feel good meal. When it comes to dressings, I have a weakness for rich dressings. It turns a healthy meal into a real comfort meal. While these dressings are delicious, most are loaded with cream, mayonnaise or oil. Miso Caesar Salad is just as satisfying as those other creamy ones, but it’s made without all the excess fat and calories. So it feels like an indulgence, but it’s completely guilt free.

The combination of Greek yogurt and cottage cheese are a perfect base for this creamy Caesar salad. The yogurt is rich and naturally creamy and the cottage cheese adds a subtle cheesy flavour. While cottage cheese is much lighter and milder than the classic parmesan cheese, it still gives the dressing a wonderfully cheesy essence.

The remainder of the ingredients gives this salad a true Cesar flavour. Lemon juice and apple cider vinegar beautifully complement the creamy texture of the dressing while adding a light tart taste. The miso paste adds a wonderful salty flavour, similar to anchovies. I love cooking with miso because there are so many ways to use it. It can be used with fish, in soups or salads. Plus, it lasts for so many months in the fridge, so it is a frugal lovers dream.

The Dijon mustard adds a distinct pop of flavour, while the Worcestershire sauce adds that undeniable Caesar salad taste. When it comes to garlic, I decided to use garlic powder for this recipe. It adds a mellow garlic flavour that won’t overwhelm the dressing. So, whether you eat Miso Caesar Salad on day one or day three, the garlic flavour will stay the same.

A rich and creamy salad dressing made without cream, oil or mayonnaise. Miso Caesar Salad has all the flavours of your favourite Caesar salad dressing, without the excess fat. With a perfect balance of garlic, salty and creamy this is one delicious salad.

Caesar Ingredients:

  • 1 head lettuce, chopped
  • 1 and 1/2 cups croutons

Miso Caesar Salad Ingredients:

  • 1/2 cup fat free plain Greek yogurt
  • 1/4 cup cottage cheese
  • 3 tablespoons lemon juice
  • 2 teaspoons miso paste
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/8 teaspoon garlic powder
  • Pinch salt and pepper

Directions:

  1. In a food processor, combine yogurt, cottage cheese, lemon juice, miso paste, apple cider vinegar, Dijon mustard, Worcestershire sauce, garlic powder, salt and pepper. Puree until the dressing is smooth and well combined.
  2. Fill a large bowl with lettuce and half of the croutons. Evenly mix in salad dressing. Top with remaining croutons.
  3. Plate and enjoy!
