As the days get colder, all I want is comfort food. Bring on the soups, sumptuous stews, or sauce-covered fish/pasta, I’m craving comfort. Mushroom Smothered Salmon tastes like a true comfort meal. Mushroom Smothered Salmon may sound fancy, but it’s really simple to make. Simply sauté mushrooms and onions and slowly add the remaining mushroom sauce ingredients. When the sauce thickens, smother it over the salmon, and bake. Easy peasy! Serve it over a bed of brown rice and you have one delicious dinner. You have to love a meal that’s healthy, takes less than 25 minutes to make, and truly tastes amazing.

Ingredients:

  • 4 (6 ounce) fillets salmon
  • 8 ounces mushrooms, sliced
  • 1/2 cup milk
  • 1/4 cup onion, diced
  • 2 tablespoons flour
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable broth (or water)
  • 1 tablespoon olive oil
  • 1/2 teaspoon parsley, dried
  • 1/2 teaspoon dill, dried
  • 1/2 teaspoon salt

Directions:

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. In a large skillet over medium heat, sauté mushrooms and onion in oil for 5 minutes, or until tender.
  3. Stir in flour, dill, parsley, and salt. Add milk and bring to boil, cook for 1 to 2 until sauce thickens. Stir in vegetable broth and lemon juice, cook for 1 minute.
  4. Place salmon on baking pan covered with parchment paper. Pour mushroom sauce evenly over salmon.
  5. Bake salmon for 8-12 minutes or until it flakes easily with a fork.
  6. Enjoy!
