Ingredients:
- 4 (6 ounce) fillets salmon
- 8 ounces mushrooms, sliced
- 1/2 cup milk
- 1/4 cup onion, diced
- 2 tablespoons flour
- 2 tablespoons lemon juice
- 2 tablespoons vegetable broth (or water)
- 1 tablespoon olive oil
- 1/2 teaspoon parsley, dried
- 1/2 teaspoon dill, dried
- 1/2 teaspoon salt
Directions:
- Preheat oven to 450 degrees F (230 degrees C).
- In a large skillet over medium heat, sauté mushrooms and onion in oil for 5 minutes, or until tender.
- Stir in flour, dill, parsley, and salt. Add milk and bring to boil, cook for 1 to 2 until sauce thickens. Stir in vegetable broth and lemon juice, cook for 1 minute.
- Place salmon on baking pan covered with parchment paper. Pour mushroom sauce evenly over salmon.
- Bake salmon for 8-12 minutes or until it flakes easily with a fork.
