This past weekend, my family and I were up north at a cottage. We walked around the lake, watched the leaves change colours and, of course, relaxed. With only a few days away, one thing I didn’t want to spend too much time doing was cooking.

At first bite, Quinoa Crusted Salmon has a tasty mix of a sweetened mustard, creamy salmon and a nutty quinoa crust. It tastes so good, it’s hard to believe that it’s so easy to make.

The first step is the quinoa. Quinoa is such a superfood. It’s a grain, a protein and it’s packed with so many nutrients. When you combine it with salmon, this is one powerhouse of a healthy dish.

Many quinoa recipes suggest that you cook it in water. Sure, it works. But if you want a boost of flavour, try cooking it in vegetable stock. It infuses the grains with a hearty and delicious vegetable flavour. With a medley of vegetables in every bite, this quinoa tastes delicious with or without the salmon.

While the quinoa is cooking, you can prepare the glaze. I absolutely love this glaze. With only three ingredients, it is so simple to make. Simply combine sugar, mustard and salt. The sugar sweetens the mustard, while the salt amplifies the flavours. Yum!

Assembling Quinoa Crusted Salmon couldn’t be easier. Simply spread the mustard glaze on the salmon. Not only does it flavour the fillet, it also helps to hold the quinoa crust in place. Next, you’ll want to spread the quinoa over the salmon. It adds texture, flavour and keeps the salmon juicy while it bakes in the oven.

If you’re looking for a deliciously simple dish, Quinoa Crusted Salmon is a new family favourite. Whether you eat hot or cold the next day, this dish is a real crowd-pleaser.

Ingredients

Units Scale
  • 1 pound salmon, fillets
  • 1 cup vegetable broth
  • 1/2 cup quinoa dry
  • 2 tablespoons granulated sugar
  • 2 tablespoons Dijon mustard
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Place salmon on parchment covered baking pan.
  3. Boil vegetable stock in a large saucepan over medium-high heat. When the stock begins to boil, lower the temperature to simmer.
  4. Add quinoa, cover the saucepan and cook for 12 to 15 minutes or until all the liquid is absorbed.
  5. In a small bowl, combine sugar, Dijon and salt.
  6. Cover with salmon with mustard glaze. Place quinoa on top.
  7. Bake salmon for 10 to 12 minutes or until it flakes easily with a fork.
  8. Plate and enjoy!
