If you’re looking for a deliciously simple dish, Quinoa Crusted Salmon is a new family favourite. Whether you eat hot or cold the next day, this dish is a real crowd-pleaser.

Ingredients
- 1 pound salmon, fillets
- 1 cup vegetable broth
- 1/2 cup quinoa dry
- 2 tablespoons granulated sugar
- 2 tablespoons Dijon mustard
- 1/4 teaspoon salt
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- Place salmon on parchment covered baking pan.
- Boil vegetable stock in a large saucepan over medium-high heat. When the stock begins to boil, lower the temperature to simmer.
- Add quinoa, cover the saucepan and cook for 12 to 15 minutes or until all the liquid is absorbed.
- In a small bowl, combine sugar, Dijon and salt.
- Cover with salmon with mustard glaze. Place quinoa on top.
- Bake salmon for 10 to 12 minutes or until it flakes easily with a fork.
- Plate and enjoy!
