1pound salmon, fillets
1cup vegetable broth
1/2cup quinoa dry
2 tablespoons granulated sugar
2 tablespoons Dijon mustard
1/4 teaspoon salt
Instructions
Preheat oven to 425 degrees F (220 degrees C).
Place salmon on parchment covered baking pan.
Boil vegetable stock in a large saucepan over medium-high heat. When the stock begins to boil, lower the temperature to simmer.
Add quinoa, cover the saucepan and cook for 12 to 15 minutes or until all the liquid is absorbed.
In a small bowl, combine sugar, Dijon and salt.
Cover with salmon with mustard glaze. Place quinoa on top.
Bake salmon for 10 to 12 minutes or until it flakes easily with a fork.
