If I’m being totally honest, growing up (and even somewhat lately) I was an asparagus avoider. At restaurants, I’d request another vegetable. At dinner parties, I’d move them around my plate, so people thought I ate them. Or, I’d “selflessly” offer them to my husband, who loves them.
I know what you’re thinking, what’s wrong with asparagus? I tried them, a bunch of times, but the taste just didn’t work for me. No matter who made it, or how it was prepared, asparagus always tasted and smelled a little too harsh.
When my parents were cleaning out their fridge before an upcoming trip, they handed me two big bunches of fresh, crisp asparagus. Knowing that my husband would love eating asparagus for dinner, I was determined to make my lesser favourite green vegetable so tasty that I, their harshest critic, would even enjoy eating it.

Roasted Asparagus with Soy Glaze

Ingredients
- 1 bunch asparagus, cleaned and trimmed
- 2–3 cloves garlic, minced
- 1 tablespoon vegetable broth
- 1 tablespoon ginger, minced
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 1 teaspoon lime juice
Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- Place asparagus in a single layer on parchment paper covered baking sheet. Toss asparagus with garlic, ginger, vegetable broth, salt, and pepper.
- Bake for 8 to 12 minutes.
- Combine soy sauce, honey, and lime juice in a small bowl.
- Microwave on high for 30 to 60 seconds.
- Plate asparagus when done. Drizzle with soy glaze.
- Enjoy!
