Roasted Eggplant Dip

A quick and easy eggplant dip flavoured with roasted red peppers and red onions. When all the vegetables are roasted together, the flavours deepen, making this a truly tasty dip.

Ingredients

  • 1 eggplant, cut into 1-inch pieces
  • 1 red pepper, chopped
  • 1/2 red onion, chopped
  • 2 tablespoons oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat oven to 400 degrees F (205 degrees C)
  2. Place eggplant, pepper and onion on parchment covered baking sheet
  3. Drizzle with oil, salt, garlic powder, and onion powder. Mix to combine.
  4. Bake for 20 minutes. Stir. Bake for 10 minutes.
  5. Cool vegetables.
  6. Add to food processor with lemon juice.
  7. Gently press on the chop button several times, until desired consistency.
  8. Serve and enjoy!
