Salmon with Avocado Basil Sauce

Ingredients

  • 1 pound salmon fillets
  • 1 avocado, peeled and cored
  • 1/2 cup plain fat free Greek yogurt
  • 1/2 cup fresh basil (9 to 10 basil leaves)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon honey
  • 1/4 teaspoon lemon zest
  • 1 clove garlic
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a food processor, combine avocado, Greek yogurt, basil, lemon juice, honey, lemon zest and garlic. Puree until smooth.
  3. Place salmon on baking pan covered with parchment paper. Sprinkle onion powder and salt over salmon. Spoon and spread avocado basil mixture evenly oven salmon fillet.
  4. Bake salmon for 10 to 12 minutes or until it flakes easily with a fork.
  5. Enjoy!
