Your family will love this homemade, cheese-filled pasta. Skinny Cottage Cheese Gnocchi is a soft, fresh pasta that has a light and deliciously cheesy flavour. Every bite will melt in your mouth. Yum!
I first tried cheese gnocchi on my honeymoon in the South of France and I’ve been dreaming about it ever since. While I was initially drawn to the beautiful beaches, culture, and romance of Nice, I couldn’t get over the amazing food. It had the perfect combination of French and Italian cuisine. French cheese and bread with Italian pasta and pizza – I could have stayed there forever.
If you’ve never tried cheese gnocchi before, it’s a light dough dumpling, airier than the classic potato gnocchi. Each piece of Skinny Cottage Cheese Gnocchi tastes like it’s infused with cheese. Yum! When it’s paired with a marinara sauce, every bite is truly perfection.
What Makes this Cheese Gnocchi Skinny?
When you bite into Skinny Cottage Cheese Gnocchi, you would never know that it is actually healthy. Seriously, every bite tastes like a true cheesy indulgence. With its light and cheesy flavour, you’d think it was a less than a healthy treat.
Skinny Cottage Cheese Gnocchi is actually lower fat than most cheese gnocchi recipes. It’s made with fat free cottage cheese, flour, and egg whites. To give it a light parmesan taste, there is also a little bit of Italian bread crumbs.
How to Make Skinny Cottage Cheese Gnocchi
When it comes to making a cheese pasta, it all starts with cheese. To make this cheesy noodle healthy and low fat, you can use fat free cottage cheese. Once you remove the curds, you have a thick and creamy cheese.
You can use an immersion blender or blender for the cheese. Whichever one you choose, puree the cottage cheese until it is completely smooth.
Once the cheese is done, you can add the cheese, eggs, herbs, spices, and bread crumbs to a large bowl. Stir the ingredients to combine.
Now, it’s time for the ingredients to transform into pasta dough. Slowly add the flour, a little bit at a time. I recommend not adding any more than 1/2 cup each time. When all the flour is added, it’s time to cut the dough into gnocchi pieces.
On a lightly floured surface, roll the dough into a thick rope. You can keep it 1/2 inch thick, so each pasta is a nice bitesize. Cut the noodle rope into 1-inch pieces. When the noodles are done, you can place them on a floured plate or baking sheet.
Fresh Pasta Simply Tastes Better
Your pasta is almost done. All that’s left is cooking it. Fresh noodles take so much less time to boil. When your water is boiling, add the gnocchi. Let it cook until the noodles float to the surface. This will only take 1 to 2 minutes. It’s now ready to eat.
Well, there’s just one thing left – the perfect sauce.
You can serve Cheese Gnocchi with your favourite marinara sauce. My family’s favourite marinara recipes are Simple Garlic Marinara Pasta or 10 Minute Marinara Sauce. Whichever sauce you choose, you can’t go wrong with Cheese Gnocchi. When you take your first bite, you’ll know why fresh pasta tastes better.
