Ingredients

  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon all spice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree
  • 1/3 cup apple sauce
  • 1/3 cup plain fat free Greek yogurt
  • 1/4 cup maple syrup
  • 4 tablespoons egg whites
  • 1 teaspoon vanilla
  • 1 cup raisins (optional)

Instructions

  1. Preheat oven to 375 F (190 C).
  2. In a large bowl combine dry ingredients: flour, sugar, baking powder, all spice, cinnamon, and salt.
  3. In another bowl combine wet ingredients: pumpkin, apple sauce, yogurt, maple syrup, egg whites, and vanilla.
  4. Pour wet mixture into dry. Stir to combine. Fold in raisins.
  5. Coat muffin tin with cooking spray. Fill each tin.
  6. Bake muffins for 18 to 22 minutes, or until muffin tops are lightly browned.
  7. Let muffins cool for 5 minutes before removing from tin.
  8. Enjoy!
