Ingredients

  • 1 pound penne noodles (or other small noodles)
  • 2 cups Tex-Mex cheese, shredded
  • 1 (15-ounce) can of black beans, rinsed and drained
  • 1 (12-ounce) can of corn, drained
  • 1 (10-ounce) can of diced tomato with juices
  • 1 cup sour cream
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin

Instructions

  1. Preheat oven to 425°F (230°C).
  2. Cook pasta according to package instructions.
  3. In an 11×13 casserole dish, mix together 1 cup of cheese, black beans, corn, tomatoes, sour cream, chili powder, garlic, onion, and cumin.
  4. Stir in noodles and top with remaining 1 cup of cheese.
  5. Cover with tin foil and bake for 15 minutes. Remove cover and bake for another 10 to 15 minutes or until cheese is melted.
