Spicy Tomato Quinoa

A lightly spicy meal packed with tomatoes, chickpeas and quinoa. This power food dish is as satisfying as it is delicious.

Ingredients

  • 2 cups vegetable stock or water
  • 1 cup uncooked quinoa, rinsed
  • 3 cloves garlic, minced
  • 1 (28 ounce) can diced tomatoes
  • 1 (19 ounce) can chickpeas
  • 1 tablespoon oil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon parsley
  • 1/2 teaspoon basil
  • 1/2 teaspoon balsamic vinegar
  • 1/4 teaspoon pepper

Instructions

  1. Boil vegetable stock in a large saucepan over medium-high heat. When the stock begins to boil, lower the temperature to simmer.
  2. Add quinoa, cover the saucepan and cook for 12 to 15 minutes or until all the liquid is absorbed. Set aside when done.
  3. In a saucepan, sauté garlic in oil on medium heat for 1 to 2 minutes, or until lightly cooked.
  4. Add chickpeas, tomatoes, red pepper flakes, salt, parsley, basil, balsamic vinegar and pepper. Cook for 10 minutes.
  5. Plate the quinoa and serve the tomato sauce on top. Enjoy!
