Ingredients
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/3 cups packed spinach
- 2/3 cup apple sauce
- 3 tablespoons low fat sour cream
- 1/2 cup honey
- 4 tablespoons egg whites
- 1 tablespoon vanilla
- 1 1/2 cups semi-sweet chocolate chips
Instructions
- Preheat oven to 375 F (190 C).
- Using a food processor, chop spinach until pieces are small and fine.
- In a large bowl combine dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl combine wet ingredients: spinach, apple sauce, sour cream, honey, egg whites, and vanilla.
- Pour wet mixture into dry. Stir to combine. Fold in chocolate chips.
- Coat muffin tin with cooking spray. Spoon muffin batter into each tin.
- Bake muffins for 15 to 17 minutes, or until muffin tops are lightly browned.
- Let muffins cool for 5 minutes before removing from tin.
