Spinach Chocolate Chip Muffins

Sneak vegetables into your loved one’s diet with Spinach Chocolate Chip Muffins. The green colour makes these muffins perfect for Halloween, St. Patrick’s Day, or any day!

Ingredients

Units Scale
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/3 cups packed spinach
  • 2/3 cup apple sauce
  • 3 tablespoons low fat sour cream
  • 1/2 cup honey
  • 4 tablespoons egg whites
  • 1 tablespoon vanilla
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat oven to 375 F (190 C).
  2. Using a food processor, chop spinach until pieces are small and fine.
  3. In a large bowl combine dry ingredients: flour, baking powder, baking soda, cinnamon, and salt.
  4. In another bowl combine wet ingredients: spinach, apple sauce, sour cream, honey, egg whites, and vanilla.
  5. Pour wet mixture into dry. Stir to combine. Fold in chocolate chips.
  6. Coat muffin tin with cooking spray. Spoon muffin batter into each tin.
  7. Bake muffins for 15 to 17 minutes, or until muffin tops are lightly browned.
  8. Let muffins cool for 5 minutes before removing from tin.
  9. Enjoy!
