I’m excited to say that my two year old daughter inspired this recipe. Lately she’s been spending a lot of time in her play kitchen. She moves around the dishes, stirs the imaginary food, and pretends to eat her delicious creations. Whenever we’re playing together, I ask her what she’s making. Every time she replies, “Red Berry Soup!” (She calls strawberries, red berries.)

It sounded good, really good. I even wanted to try it. What could be more exciting for my little girl than truly making her imaginary food creations? Over the weekend, we picked up all the ingredients and together we made Strawberry Soup.

We had so much fun making Strawberry Soup (it only took 5 minutes), but we had even more fun eating it. It was better than both of us could have imagined. We could have licked the bowl clean.

Strawberry Soup is rich, creamy, and totally kid friendly. I never imagined that something this sweet and creamy could be low fat, somehow it is. Every spoonful of this thick, creamy soup tastes like perfection. The combination of sweet strawberries, creamy sour cream and vanilla Greek yogurt, and tart cranberry and lime juice is delicious.

Enjoy Strawberry Soup as an appetizer or even as a dessert, it’s perfect anyway. I love it with a little extra garnish of strawberries and fat free vanilla Greek yogurt, my little girl prefers it just the way it is. Both ways are truly enjoyable.

Strawberry Soup

The kid in you will love this low fat Strawberry Soup. It’s sweet, creamy, and totally delicious. Enjoy it at the beginning of the meal, or even for dessert. This rich, pink treat is perfect anytime.

Ingredients:

  • 1 1/4 cups fresh or frozen strawberries, thawed
  • 1 1/4 cups low fat sour cream
  • 1/2 cup fat free vanilla Greek yogurt
  • 1/2 cup confectioner’s sugar
  • 2 tablespoons cranberry juice
  • 1 tablespoon lime juice (1 lime)

Directions:

  1. Thaw frozen berries in their juices.
  2. Combine all ingredients in food processor. Blend until smooth.
  3. Serve immediately or chill before serving. Garnish with vanilla yogurt and strawberries.
  4. Enjoy!
