With a mix of fresh flavours, Sweet Avocado Basil Balsamic Salad tastes like a summer’s day. The combination of avocado, basil, maple syrup, lemon juice, balsamic vinegar, Dijon mustard and garlic create a wonderfully complex flavoured dressing. The avocado and balsamic vinegar have an almost oil and vinegar type flavour. Avocado adds a delicious richness without adding excess fat or calories.

Lemon juice amplifies the fresh flavours and adds a delicious tart taste. While the maple syrup sweetens the dressing and balances the tart lemon flavour. Lastly, the Dijon mustard and garlic rounds out the dressing, making this one awesome salad.

Sweet Avocado Basil Balsamic Salad -- Rich and creamy basil balsamic salad dressing made with avocados instead of olive oil. | thishappymommy.comWonderfully creamy salad dressing with hints of sweet maple syrup, balsamic vinegar, and fresh basil. Serve it with lettuce, mushrooms, and roasted red peppers and you have a real crave-worthy salad.

Salad Ingredients:

  • 1 head lettuce
  • 1 cup mushrooms
  • 1/4 cup roasted red peppers, diced

Salad Dressing Ingredients:

  • 1 ripe avocado, pitted and peeled
  • 1/2 cup fresh basil, finely chopped
  • 2 tablespoons maple syrup
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1 tablespoon balsamic vinegar
  • 1 and 1/2 teaspoons Dijon mustard
  • 1 clove garlic, minced
  • 1/4 teaspoon salt

Note: If the dressing seems a little too thick. You can thin it with a little more water. Add one tablespoon at a time until desired consistency.

Directions:

  1. In a medium pan, sauté mushrooms for 3 to 5 minute, or until they release their water. Set aside.
  2. In a food processor, combine avocado, basil, maple syrup, lemon, water, balsamic vinegar, Dijon mustard, garlic and salt.
  3. Add lettuce, mushrooms and roasted red peppers to a large bowl. Toss with salad dressing.
  4. Plate and enjoy!
