Ingredients

  • 4 chicken breasts, boneless and skinless
  • 2 cups tomatoes, diced (canned or fresh)
  • 1/2 large red onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons apple cider vinegar
  • 1 1/2 tablespoons grapeseed oil
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon parsley
  • 1/2 teaspoon basil
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 450 degrees F (220 degrees C).
  2. In a baking dish, combine tomatoes, onion, garlic, vinegar, oil, rosemary, parsley, basil, and salt.
  3. Add chicken breasts to baking dish and cover with tomato mixture. (Optionally, refrigerate for 30 minutes before baking.)
  4. Bake for 20 minutes. Cook until an internal temperature of 165°F (74°C).
  5. Let it rest for 3 to 5 minutes before serving.
