  • 4 cups cooked chicken, shredded
  • 3 cups vegetable broth
  • 2 (19-ounce) white kidney beans, drained
  • 1 cup salsa verde
  • 1 teaspoon ground cumin


  1. In a large stockpot, combine vegetable broth, beans, salsa and cumin.
  2. Bring to a boil and reduce heat to medium. Cook for 5 to 10 minutes, until heated through.
  3. Using a potato masher, smash some of the beans to thicken the broth.
  4. Add chicken and cook for 5 minutes, until chicken is warmed.
  5. Serve immediately, garnish with your favorite toppings.


OPTIONAL TOPPINGS: avocado, cilantro, shredded cheese, green onions, and lime.

NOTES: 4 cups shredded chicken use 2 medium-sized boneless skinless rotisserie chicken breasts.
