Yogurt Blueberry Pancakes

Ingredients

Units Scale
  • 2 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup fat free vanilla Greek yogurt
  • 1 cup milk
  • 6 tablespoons egg whites
  • 3 tablespoons maple syrup
  • 1 cup blueberries
  • Oil (as needed for cooking)

Instructions

  1. In a large mixing bowl, combine flour, baking powder, salt, and cinnamon.
  2. In a smaller mixing bowl combine yogurt, milk, eggs, honey, and vanilla.
  3. Add yogurt mixture to flour one. Gently fold in blueberries.
  4. Preheat non-stick skillet over medium heat. Reduce heat to low-medium, add oil to a skillet.
  5. Add 1/4 cup of batter for each pancake. Cook for 1 to 2 minutes, or until batter begins to bubble.
  6. Flip carefully and cook for another 1 to 2 minutes, or until edges are lightly browned.
  7. Plate and enjoy!
