  • 2/3 cup peanut butter
  • 1 (14 ounce) can of coconut milk
  • 1/2 cup soy sauce
  • 4 cups mushrooms, sliced
  • Water, as needed


  1. In a large pot, add noodles, peanut butter, coconut milk, soy sauce, mushrooms, and water to cover the noodles. Bring to a boil over medium-high heat.
  2. Reduce heat to medium-low and cook for 8 to 10 minutes, or until the noodles are cooked and the sauce has thickened. Stir occasionally to prevent sticking. If the sauce is too thick, add more water as needed.
  3. Remove the pot from the heat and let it sit for 5 minutes. Serve warm with your favorite toppings.
