Ingredients

  • 1 pound salmon, fillets
  • 2/3 cup panko bread crumbs
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon grapeseed oil
  • 1/4 teaspoon paprika
  • 1/2 teaspoon thyme, dried
  • 1/2 lemon, wedged (optional)

Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. In a small bowl, combine panko, parsley, oil, paprika, and thyme.
  3. In another bowl, combine mustard and honey.
  4. Place salmon on a parchment paper covered baking sheet. Spread the mustard mixture evenly over the salmon. Top with panko mixture.
  5. Bake salmon for 10 to 12 minutes or until it flakes easily with a fork. Serve with lemon wedges and enjoy!
