  • 3 cups vegetable broth
  • 4 cups baby spinach
  • 2 (17 ounce) package gnocchi, refrigerated or dried
  • 2 (10 ounce) package of cherry tomatoes, halved
  • 5 to 6 cloves garlic, minced
  • Salt and pepper, to taste


  1. In a large pan over medium heat, add cooking spray and garlic and cook for 1 to 2 minutes, until fragrant.
  2. Add cherry tomatoes and cook for 5 minutes. Smash gently with the back of a wooden spoon. Let the juices cook for 1 to 2 minutes.
  3. Add 2 cups vegetable broth bring to a simmer and cook for 2 minutes.
  4. Add gnocchi, stir to coat in the sauce. Bring to a simmer and cover (use foil if you don’t have a lid). Cook for 5 to 6 minutes, stirring occasionally. Cook until gnocchi are soft.
  5. Stir in the spinach, cook until wilted. Add 1 more cup of vegetable broth and cook for 2 more minutes.
