Over the weekend, my daughter turned two years old. I can’t believe it, I have a two year old! How did that happen? Has it really been two years since we brought that tiny baby home from the hospital? As first time parents, we had no idea how we’d do it, but somehow we got here.

For my daughter’s first birthday, we baked a cake together. (It was no culinary feat, it was a mildly tweaked boxed cake with store bought icing). Since she had so much fun baking it with me last year, I decided to try it again. She is my official sous chef, after all.

This year I opted to make an Angel Food Birthday Cake with Cream Cheese Frosting. I love angel food cake. It’s light, airy, and fat free – thank you fluffy egg whites! To make it a little more festive, I added sprinkles to the cake batter and on top of the icing, of course.

For the icing, I knew I had to make cream cheese frosting. My daughter loves cream cheese. She loves it so much, she could eat it straight out of the container – if I let her.

When I first showed the birthday girl the cake, (it finished baking and was frosted during nap time) she said, “Wow!”

Angel Food Birthday Cake with Cream Cheese Frosting is truly beautiful, but when you cut into the cake, the fun really begins. Every bite is filled with bright, colourful sprinkles. The sprinkles inside the cake batter are festively colourful without being crunchy.

So it’s a party on your plate, and every bite tastes like creamy heaven.
