Strawberry Bread tastes like summertime in a loaf pan. With bits of fresh strawberries baked through and a lightly sweetened bread, it tastes like a healthier version of strawberry shortcake or any of your favorite strawberry baked treats.

It’s hard to decide if this bread is breakfast, snack food, or dessert. Either way, Strawberry Bread is the perfect balance of fluffy bread with vanilla and fruit-flavoured sweetness.

But this bread is even better when you realize how easy it is to make. You don’t need any special tools or even a mixer. This bread comes together so easier. You just need two mixing bowls, a loaf pan, and a handful of ingredients to make this soft, moist, mouthwatering bread.

And it’s a great way to use fresh summer berries. Whether you go berry picking or buy them from the grocery store, Strawberry Bread is a tasty treat that’s perfect to enjoy in the summer months of the year.

What Can You Make With So Many Ripe Strawberries?

When we went strawberry picking as a family over the weekend, there were so many delicious, and juicy, sun-kissed strawberries. The bushes were filled with beautiful red strawberries and each one looked tastier than the last. We picked one and then another and before we knew it, our bucket was filled with tasty and delicious strawberries.

As delicious as the strawberries were on their own, when you have so many leftover strawberries, eventually you want to making something with them. And there’s nothing better than a quick and easy treat.

Strawberry Bread is a perfect easy treat. It’s so easy to prepare and it tastes absolutely amazing when it’s done. Seriously, your mouth just waters smelling it bake in the oven. Yes, it smells that good!

This bread is made with 1 ½ cups of chopped strawberries. So, it’s a wonderful way to use ripe strawberries that perfectly sweeten a tasty bread! That’s a definite win-win.

If you’re looking for the perfect strawberries to add to Strawberry Bread, you’ll want to use firm strawberries that are bright red. The firmer they are the more they hold together while baking. And bright red berries are the ripest and sweetest. Yum!

A Healthy Bread Made Without Oil, Cream, and Butter

To make Strawberry Bread healthier, it is made without oil, cream and butter. While these ingredients can add flavor and richness, they really aren’t needed. Instead this bread is made with apple sauce and Greek yogurt.

If you’ve never made bread with apple sauce and Greek yogurt it is definitely worth trying. It gives the bread a rich, sweet, and fruity flavor and it keeps it moist and delicious. You have to love a healthier bread that is still so tasty.

So many people have tried this bread and no one believes it’s healthier. My kids, husband, friends, and family (this bread is really a hit!) no one can taste the difference. It just tastes too good.

How to Make Strawberry Bread

Step 1: Preheat oven to 325°F (165°C)

This is the perfect temperature for cooking Strawberry Bread. At a lower temperature the flavors cook together longer and you end up with a wonderfully flavored bread.

Step 2: Mix dry ingredients

When it comes to making Strawberry bread, it all starts with making the dry ingredients. In a medium bowl, combine flour, granulated sugar, brown sugar, baking soda, cinnamon and salt. And then you’ll want to set it aside to combine the wet ingredients in another bowl.

Step 3: Mix wet ingredients and add strawberries

Now comes the wet ingredients. In a medium bowl, combine yogurt, milk, apple sauce, egg whites and vanilla. Once the wet ingredients are well combined, pour the dry ingredients into wet ones.

You’ll want to mix the bread batter until there are no pockets of dry ingredients. You want it to be evenly mixed throughout.

After dicing the strawberries, pat them dry to remove any excess moisture. If the strawberries are too wet, it will make the bread too damp. And no one wants a soggy bread. Once you pat them dry, they will add the perfect strawberry flavor.

Before you add the strawberries into the bread batter, you’ll want to evenly cover them with 1 tablespoon of flavor. This is such an easy trick.

When strawberries are covered with flour, it helps them mix into the bread better. This way they will with bake throughout the bread instead of sinking to the bottom. The flour is like a tasty pool floaty for the berries in a pool of yummy bread batter. Yum!

Now that your strawberries are ready for the bread, gently fold them into the bread batter. All that’s left is baking it.

Step 4: Transfer to pan and bake

Coat a non-stick loaf pan (9 x 5) with cooking spray. Even if you are using a non-stick pan, you still want to add cooking spray. This helps to make sure that your delicious bread doesn’t get stuck in the bread pan.

Carefully pour the bread batter into loaf pan and bake. You’ll want to bake for 55 to 60 minutes.

When the bread has baked for 40 minutes, you can cover it with aluminum foil to prevent it from browning too fast. This keeps your bread softer and gives it a more cake-like crust.

You’ll know that your bread is ready when it is golden brown and a toothpick comes out clean.

Step 5: Cool and slice

Cool the Strawberry Bread for 10 minutes before removing from pan. When the bread is no longer too hot, you can slice it.

A Rich and Moist Quick Bread

Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup plain fat free Greek yogurt
  • 1/2 cup milk
  • 1/3 cup apple sauce
  • 3 tablespoons egg whites
  • 2 teaspoons vanilla
  • 1 1/2 cups strawberries, chopped and tossed in 1 tablespoon all-purpose flour

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix dry ingredients: In a medium bowl, combine flour, granulated sugar, brown sugar, baking soda, cinnamon and salt.
  3. Mix wet ingredients: In a smaller bowl, combine yogurt, milk, apple sauce, egg whites and vanilla. Mix in strawberries covered with flour to make bread batter.
  4. Coat non-stick loaf pan (9 x 5) with cooking spray. Add batter to loaf pan. Bake for 55 to 60 minutes, until the top is golden brown and a toothpick comes out clean. When the bread has baked for 40 minutes, cover with aluminum foil to prevent it from browning too fast.
  5. Cool for 10 minutes before removing from pan and slicing.

Notes

When you are baking with fresh strawberries, look for ones that red and firm. These are the best and tastiest strawberries to bake with. Also, to keep the strawberries and your dessert from being wet, after dicing them, remember to pat them dry to remove any excess moisture.
